Some of the best recipes aren’t found in cookbooks.

They’re shared around kitchen islands, passed across holiday tables, and scribbled on scraps of paper (or your notes app on your phone) after someone inevitably asks, “Can I get that recipe?”
For years, one of my favorite appetizers has come from my brother and sister-in-law. It’s incredibly simple: caramelized onions, blue cheese, and grapes on flatbread. That’s it.
Every time they serve it, the same thing happens. People gather around the plate. Someone asks what’s in it. A few minutes later, it’s gone.
I’ve always loved the combination of sweet grapes, rich blue cheese, and deeply caramelized onions, but recently I found myself wanting to turn those flavors into something a little more substantial. Also, I’m extra. As soon as I look at a recipe, I start thinking of layering additional flavors. Creme fraîche with a hint of garlic as a base layer, mozzarella for a nice golden-brown cheesy pull, bacon because… It’s bacon for goodness’ sake. Bourbon honey drizzle for a sweet/savory charm and fresh thyme to bring it all together.
That’s how this delicious Caramelized Onion, Bacon & Blue Cheese Flatbread was born.

Travel has a funny way of changing how you cook. You come home from a trip and suddenly find yourself adding fresh herbs you discovered in a French market, reaching for cheeses that remind you of Italy, or recreating a flavor combination from a memorable meal you enjoyed halfway across the world.
This flatbread is filled with those little travel memories.
Sweet caramelized onions layered with fresh thyme. Creamy mozzarella. Bold blue cheese. Juicy grapes and ripe pear. Crispy bacon. A drizzle of bourbon honey over the top.
It’s simple enough for a weeknight dinner but impressive enough to serve when friends stop by.
Most importantly, it’s one of those recipes that sparks conversation- the kind that reminds me of the best meals we’ve enjoyed both at home and while traveling.
Because sometimes the best souvenirs aren’t things at all.

Gourmet Caramelized Onion, Pear, Grape & Bacon Flatbread
Serves: 2 as a meal or 4 as an appetizer
Prep Time: About 25 minutes active time
Ingredients
For the Garlic Crème Fraîche Base
- 3 tablespoons crème fraîche
- 1 small garlic clove, finely grated
- Pinch of sea salt
- Freshly cracked black pepper
For the Flatbread
- 2 pre-cooked flatbreads or naan breads
- 2 medium yellow or sweet onions, caramelized with fresh thyme leaves
- 4–5 strips bacon, cooked crisp and crumbled
- 1 firm Bosc pear, thinly sliced (I prefer 1/8 inch thick)
- ½ cup red or black grapes, sliced lengthwise
- ½ cup crumbled blue cheese or a blue cheese-Gorgonzola blend
- Fresh mozzarella balls, torn into bite-sized pieces
- Freshly grated Parmesan cheese
- 2 tablespoons bourbon honey
Directions
1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place the flatbreads on top.
2. Make the Garlic Crème Fraîche
In a small bowl, stir together the crème fraîche, garlic, salt, and pepper. Spread a thin layer over each flatbread.
3. Add the Onions and Bacon
Evenly distribute the thyme-infused caramelized onions over the crème fraîche. Sprinkle the crumbled bacon across the top.
4. Layer the Fruit
Arrange the pear slices across the flatbread, then tuck the grape halves into the open spaces between them.
5. Add the Cheese
Scatter the mozzarella and blue cheese over the fruit and onions. Finish with a generous grating of fresh Parmesan.
6. Bake
Bake for 7–10 minutes, watching carefully. The mozzarella should be melted and bubbling, and the grapes should begin to soften and blister.
If needed, switch the oven to broil for the final minute to achieve a golden finish.
7. Finish and Serve
Remove from the oven and slice immediately. Drizzle generously with bourbon honey while still hot.
I use bourbon honey from The Honey Truck, owned and operated by Danielle Brooks, an incredible beekeeper out of Florida. It’s a subtle but delicious addition (you’ll want to put it on everything).
For a light dinner, serve alongside a simple arugula salad tossed with olive oil, fresh lemon juice, and a light vinaigrette. The peppery greens perfectly balance the richness of the cheeses and bacon.
